A full house with a depleting larder makes it tough to get creative for Iftaar dishes during Ramadan. Cooking Expert, Chef Harpal Singh Sokhi shares two recipes for a sweet end to your daily fast.
Rose Flour Halwa

Ingredients Quantity
- Ghee 2Tbsp
- Rajgira Flour 1 cup
- Assorted Nuts chopped 2 Tbsp
- Sugar 5 Tbsp
- Rose petals 15-20 nos
- Rose Syrup 4 Tbsp
- Cardamom powder 1 Tspn
- Khoya ½ Cup
- Milk 1 cup
Method:
- Heat the ghee in a pan. Add the rajgira flour and stir fry.
- Add assorted nuts and stir fry till the flour turns slightly brown.
- Add sugar, rose syrup and mix well.
- Let it simmer for 3-4 min, then add milk, cardamom powder and mix well.
- Cook till you get the desired consistency.
- Add khoya, rose petals, and let it simmer for 2-3 mins.
- When the halwa has turned slightly thick, take it off the heat.
- Garnish with rose petals and serve warm.
Garnish:
Rose flower petals are edible as are dried rose petals. Rose petals are 95 percent water and essence. Rose water is also good for the eyes, and according to ancient Chinese beliefs it is a good medicine for digestive disorders. Make your Iftaar special with beautiful rose petal garnishing.
Butterscotch Chocolate Sheera

For Grinding
- Biscuits ​​​​​4-5 No
- Ghee​​​​​ 1 Tsp
- Condensed Milk​​​​ 1 Tsp
- Brown sugar​​​​ 1 Tsp
For cooking
- Ghee​​​​​ 2 Tbsp
- Pistachio, crushed​​​ 2 Tbsp
- Rava (Semolina)​​​ ​½ Cup
- Milk​​​​​ 2 Cup
- Condensed Milk​​​​ 1/2 Cup
- Butterscotch syrup​​ ​ 2 Tbsp
For Garnish ​​
- Chocolate syrup​​​ 2 Tbsp
- Pistachio, crushed​​​ 1 Tbsp
Method
- Take biscuits, break them in to small pieces and add in blender, add brown sugar and 1tsp of ghee.
- Add condensed milk 1 tsp and coarsely grind
- Pour the mixture in cups for a base and keep aside.
- In a pan add ghee, pista and roast for 2-3 min. Then add rava and sauté till rava is roasted.
- Add condensed milk, milk to the mixture and cook well till sheera thickens.
- Add butterscotch syrup in the pan, mix well.
- Now pour the mixture in the cups with the biscuit base. Top it with thick chocolate syrup.
- Garnish with remaining pista and serve hot.
Tip:
Rava is slow in digestion so it keeps your stomach full for a longer period of time. If consumed in controlled manner it is beneficial for weight loss.
